hillbillies or is it hillbillys?

so i have these relatives;  im tellin ya, the people that make these reality programs in the swamp and catch creatures while a camera crew follows them around havent got ANYTHING on the fruit cakes that im told are related to me.  i mean, its amazing that i have a brain in my head.  the intelligence that comes forth in their company is by far better than any fictional story i could ever make up.  you just cant make this kind of shit up.  i really wonder where they come up with these ideas on how stuff works in this world.  i have to say, it is definitely creative sometimes. hillbillys is definitely the first word coming to mind.
